The deli counter is one of the highest-risk areas in a grocery store for food safety: sliced meats and cheeses, prepared salads, hot food and constant customer service. It is also a strong profit centre when it is clean, well stocked and fast. A daily checklist covers the routines that inspectors and customers both notice.

Opening

  • Check and log display case, walk-in and hot-holding temperatures
  • Check slicers are clean, assembled correctly and guards in place
  • Rotate stock: first in, first out
  • Check dates on all products and remove anything expired
  • Set out fresh prepared salads and hot food at safe temperatures
  • Check scales are working and labels print correctly
  • Stock gloves, wrapping, containers and labels

Food Safety During Service

  • Wash hands and change gloves between tasks
  • Keep raw and ready-to-eat foods separate
  • Use separate utensils for allergens where required
  • Check hot and cold holding temperatures at set intervals and log them
  • Label prepared items with date and time

Slicer Safety and Cleaning

  • Only trained staff use slicers
  • Clean and sanitise slicers at the frequency your food safety plan requires, and whenever switching between products that risk cross-contact
  • Never leave a slicer running unattended

Customer Service

  • Greet customers and manage the queue
  • Offer samples according to your policy
  • Know allergen information for every product, or where to find it

Closing

  • Remove and store or discard products according to your plan
  • Fully disassemble, clean and sanitise slicers
  • Clean display cases, counters and floors
  • Log closing temperatures
  • Record waste
  • Note stock to order
