Thanksgiving Day Restaurant Service Checklist
Thanksgiving falls on Thursday 26 November in 2026, and for restaurants that open, it is one of the most demanding days of the year: fixed menus, large family tables, timed seatings and a wave of takeout and catering orders. Everything is concentrated into a few hours, and families remember if something goes wrong. A clear checklist turns the day into a well-rehearsed service.
Two to Three Weeks Before
- Finalise the menu and price, including vegetarian and allergy options
- Decide on seating times and table turns
- Open reservations and set takeout order deadlines
- Order turkeys and specialty items early; suppliers sell out
- Schedule staff, including extra prep cooks and dishwashers
- Confirm who is working the holiday and how holiday pay works
Two Days Before
- Receive deliveries and check quantities and temperatures
- Begin thawing turkeys safely in the refrigerator, following food safety timelines
- Prep sides, sauces and desserts that hold well
- Label and date everything
- Print takeout labels and pickup schedule
Day Of: Before Service
- Check walk-in and reach-in temperatures
- Confirm turkey cooking schedule and internal temperature checks
- Set tables for large parties and check high chairs
- Brief front and back of house on menu, allergens and seating plan
- Assign a dedicated person to takeout pickup
- Check card readers and cash floats
During Service
- Stick to the seating schedule and communicate delays early
- Keep allergens separate and labelled
- Check hot-holding temperatures regularly
- Keep the dish pit staffed so plates and pans keep moving
- Give servers a quick update between seatings
Takeout and Catering
- Pack orders in pickup order with labels and reheating instructions
- Confirm each order against the ticket before handover
- Keep a separate pickup line away from the dining room entrance
Closing
- Cool leftovers quickly and store safely
- Deep clean equipment that ran all day
- Count cash and reconcile takeout payments
- Note what ran out and what was over-prepped for next year
- Thank the team; many gave up their own holiday
