
How to Assign Restaurant Side Work Fairly
Side work is everything servers and bartenders do besides serving guests: rolling silverware, stocking stations, cutting fruit, refilling condiments, cleaning the coffee station. It is necessary, and it is also one of the biggest sources of friction on a restaurant team, because it is easy to dodge and easy to resent.
Define It Clearly
Write down every side work task by shift, with a short description of what "done" means. "Stock server station" becomes "Fill straws, napkins, to-go containers and condiments to the marked line."
Split it into:
- Opening side work
- Running side work (during service)
- Closing side work
Assign It, Do Not Leave It Open
"Everyone helps" means the same three people do it. Assign side work by section or by name on the schedule. Rotate the less pleasant tasks so they do not always land on the newest server.
Balance It Against Service
Side work should not take servers away from guests during the rush. Schedule most of it before and after service, and keep running side work light. If side work regularly takes longer than planned, the list is too long or staffing is too thin.
Know the Pay Rules
In the US, rules about how much time tipped employees can spend on non-tipped work, and how they are paid for it, have changed over the years and vary by state. Check It Before People Leave
Closing side work should be checked by a manager or closing lead before servers clock out. A quick walk of each station is enough. Checking every night removes the arguments the next morning.
Make It Fair Over Time
- Rotate assignments weekly
- Keep a simple record of who did what
- Recognise people who do it well
- Address people who skip it, privately and early

- Restock server station to marked levels
- Roll 50 sets of silverware
- Clean and refill condiment caddies
- Wipe down and empty coffee station
- Clean and stock section tables and chairs
